You can use the Microsoft equation editor from within Excel.
Alternately, you can look for a font that contains that symbol (a font
newsgroup would likely be able to give more specific information). It
has been reported that the Math Ext font contains the Xbar symbol. If
you have old MS CD's you might find it there

xbar is Alt-0214 in the Math Ext font from

xbar is Alt-0120 in the MS Reference 1 font

Step 1: Insert -> Equation (new equation) -> (Equation Tools) [equation object will appear on sheet]
-> Design -> Accent -> select Overbar (3rd row, 2nd column in drop-down selector).
Step 2: In the equation object, click on the dotted box (below the overbar). Press the letter "x".
Step 3: Move the equation to where you want it. (Click & hold on the object frame, so it's a solid line, and drag it).
