Automatic Cash Denominations from Cash Total

If I had a £75 float and I traded for the day and say ended with £214.61, what formulas can I use to work out what cash I need to make up the original float of £75, if I:-

a)a formula for wanting to retain as much of the smaller denominations as possible for change
b)a formula to make sure that the set denomination is available in the cash pot,

ie. £75 float to retain, balance to be banked, £75 say may want £15 £1 coins but there may only be £13 £1 coins in the pot.

I hope this makes sense and someone can help me as I cannot find any information online!
