Create a list of the values that you want to allow. Select them and create named range, let's say MoodList. Then go back to the cell you want to allow them to fill in and use Data Validation, List, and specify =MoodList for the list. Data Validation also has the option to add an input message.

I am using Excel 2008 on a mac.

Oh. Please update your profile accordingly. My advice is good for 2003 and 2007 but I have not used the Mac version. I would imagine these features are the same, though.
